…even though being in a formative stage is one of its most evident characteristics, the cuisine -as such- of the Baja peninsula dates back to the 17th century, when the Mission of Loreto is founded in 1697… …since the native population practically disappeared, especially in the southern part of the peninsula, its current population, over the last three centuries, has kept on arriving from different lands, with a gastronomic tradition that slowly, besides coexisting, has been assimilating to that of previous settlers…
The above quote, taken from Señora Edith Jiménez-Moreno’s book on the Baja cuisine, aptly defines what you might expect in her restaurant: from traditional hand-made tortillas cooking in the open mesquite grill, where prime cuts of properly aged imported beef peacefully coexist with freshly-caught local pacific lobster and breasts of farm-grown chicken, to a classic Caesar’s salad, an international shrimp scampi, or an array of combinations that might include cheese-stuffed batter-fried poblano peppers garnished with fried plantains or sea-bass in a delicately tropical fresh mango sauce.
Known for her energy, drive, and 1,000-megawatt smile, Edith Jiménez Moreno Smith is the force behind The Office and Edith¹s restaurants. From a small village in the verdant mountains of Guerrero State to the culture shock of 1970s Cabo San Lucas as a teenager, her rise to the top began, as most self-made success stories do, at the bottom. With no formal education in the hospitality industry, Edith trained at Cabo¹s early hotels, restaurants and bars, learning the keys to success from the ground up, while taking time off each year to travel. Edith loves to eat and loves good food‹her restaurants highlighting fresh regional ingredients, with just the right combination of herbs and spices to create the savory ³Baja cuisine² she is known for since 1987.
Edith’s is open for dinner only, from 5 until 11, and reservations are strongly advised. Available for groups. Visa and MasterCard accepted.The setting is deserving of such fare: overlooking the bay and the rocks that mark the peninsular land’s end, surrounding an original construction made of woven desert shrub branches and adobe, dating back to the last century and now housing the well-stocked wine cellar, are intimate candle-lit terraces, both al fresco and under palm-thatched palapas, where the food, the view, the service and the atmosphere are enjoyed by those fortunate to be guests of Edith’s on any given evening.
Edith’s sizzling Miraflores mesquite grill imbibes each plate with irresistible flavor. If you have dined here before, you may have a favorite, if not, put the menu away and let the staff introduce you to the delights of our regional fare.
She strongly believes in staff training, “part of training is to experience the world like our clients do,” she says, sending staff abroad to Europe and the U.S., and to Baja California¹s Valle de Guadalupe to appreciate the boutique Mexican wines proudly served at Edith¹s. Although she spends as much time as possible relaxing with her husband and their two daughters, Edith is busy creating a third restaurant; and loves to explore the small mountain ranch communities north of Cabo, looking for authentic Californio cuisine.
